How to Transport a Cake Home in One Piece

The short answer on how to transport a cake is: cold, flat and low. Chill it before it moves, keep the box level at all times, carry it from underneath with both hands, and set it on the floor of the car rather than on a seat. Most cake damage in Budapest happens in the last two minutes, between the car door and the kitchen table.

How to transport a cake: five rules

  1. Chill it first. A cold buttercream cake is firm and forgiving. A warm one dents if you look at it. If you are collecting, the cake will already be chilled — the job is to keep it that way.
  2. Keep the box flat. Never tilt it, never carry it by one corner, never hold it like a pizza. Icing that slides once does not slide back.
  3. Carry from underneath. Both hands flat under the base of the box, held at waist height, elbows in. The handle on a box is for lifting it onto a table, not for a ten-minute walk.
  4. Put it on the floor of the car. The footwell behind the front seats is the flattest, coolest, least bouncy place in any car. A seat is sloped and a boot is a trampoline. A non-slip mat or a folded towel underneath stops it sliding.
  5. Drive like there is an open coffee beside you. Slow into corners, gentle on the brakes, and take the speed bumps at a crawl.

Cars, cobbles and the 4–6 tram

Budapest adds its own hazards. The side streets of District VII have stretches of cobble and tram rails that will shake a cake more than any motorway, so the last few hundred metres deserve the most care, not the least.

If you are collecting at Erzsébet krt. 19 and going home by tram, that is completely doable. Hold the box level in both hands, stand near a door rather than sitting with the box on your lap, and brace when the 4–6 pulls away from Blaha Lujza tér. If you are changing lines, take the longer route with fewer changes. Walking part of the way is usually kinder to a cake than one extra transfer.

In a Budapest July, heat is the real enemy. Run the air conditioning before the cake goes in, do not leave it in a parked car for even ten minutes, and get it into a fridge as soon as you arrive. In January the opposite applies and the cake is perfectly happy — winter is the easy season for cake transport.

When you get it home

Put the cake in the fridge, still in its box, and leave the box closed. An open box in a fridge means a cake that smells of last night's dinner.

Take it out about twenty minutes before you serve it. Buttercream straight from the fridge is hard and drags under a knife; twenty minutes at room temperature and it cuts cleanly. Use a long knife, wipe it between slices, and cut all the way to the base in one downward motion rather than sawing.

Keep the cake out of direct sun on the table. A whipped-cream cake needs to go back into the fridge between servings; buttercream will sit out for a couple of hours without complaint.
