In the buttercream vs whipped cream cake question, the short answer is that buttercream wins whenever the cake has to be decorated, coloured, written on or carried anywhere. What buttercream actually does

Buttercream is butter and sugar beaten until it is pale and holds a peak. It is a structural material as much as a flavour. Piped through a nozzle it keeps the ridge, the rosette, the shell border. Smoothed with a warm palette knife it gives the flat sides and clean top edge that make a cake look finished rather than homemade.

It also takes colour properly. Gel colour stirred into buttercream stays where you put it, which is what makes an ombre, a two-tone border or a colour matched to a dress possible at all. The trade is sweetness. Buttercream is sweet, and it is meant to be eaten in a thin layer with the sponge, not scraped off in a mound.

What whipped cream does

Whipped cream is lighter on the tongue and disappears faster. In Hungary it is the familiar cake finish — tejszínhab is on almost every cake counter in the country, and a lot of people here grew up expecting a cake to taste of cream rather than butter.

Its weakness is time and temperature. Whipped cream softens as it warms, loses definition within an hour or two out of the fridge, and will not hold a piped name or a sharp edge. It also carries colour poorly; colours go pastel and dull rather than clear. For a cake that stays in the fridge and gets cut immediately, that does not matter at all. For a cake that sits on a table through a party, it does.

If the cake is the centre of a party — photos, candles, a name piped across the top, a colour that matches the balloons — choose buttercream and do not think about it again. If it is a small family cake going straight from the fridge to the table, whipped cream is a pleasure.

The real question is not taste, it is what happens between the kitchen and the candle.
