Food delivery to all Budapest districts means exactly that: all 23, Buda and Pest, District I through District XXIII. A tray of pilau can go to a flat in Óbuda, an office in District XIII, a church hall in Zugló or a family house in Soroksár. The kitchen cooks Sunday to Friday, closed Saturday for the Sabbath, and collection in District VII is always an option.

Budapest is not a small city and the districts are not the same distance apart. District VI is ten minutes from the kitchen. District XXIII is not. Covering the whole city honestly means planning around that rather than pretending the difference does not exist.

So the cooking is timed to the delivery, not the other way round. A lunchtime tray going to Újbuda comes off the stove later than one being collected on the körút. A party order for the Buda hills is packed hot, covered, and driven straight out.

What travels well and what does not

Some dishes are better travellers than others, and it is worth saying so plainly rather than sending you something that arrives past its best.

Rice and stews are the strongest. Pilau ya nyama, beef stew with potatoes, chicken stew and beans in coconut milk all hold heat in covered trays, and a stew that sits ten minutes after arriving is often better than one served the second it is ready. Sukuma wiki travels fine. Kachumbari goes in a separate cold container and arrives sharp and crisp.

Chapati travels well and takes under a minute in a dry pan to come back to life. Sambusa and mandazi are best eaten soon after they arrive, so for parties we fry them last and pack them on top. Ugali is the one honest exception: it is at its best minutes after it is made, so for a long run out to District XXI we will often suggest rice or chapati instead and say why.

Cakes are delivered flat and level, and they need three days' notice — a week if the colour has to match something or the piping is heavy.

The kitchen is open Sunday to Friday and closed all day Saturday for the Sabbath. A Budapest winter is the real test of all this, and covered trays of hot stew do better in a January wind than anything fried. In summer, the opposite — kachumbari and cold drinks carry the table.
