The hour before people eat

Set the trays away from an open window or a propped door. Warm the plates if the venue lets you — a cold plate takes more heat out of a serving than the wait ever did. Close the lids between waves; people always come back. If you truly have to reheat, do it low, covered, one tray at a time.
Venues, districts and the Saturday rule
Delivery goes to all 23 districts of Budapest, Buda and Pest — flats, offices and hired halls. Rented venues often have no kitchen at all, which is worth saying when you order, so the timing is built around that rather than around an oven you do not have.
