How to combine trays
For a party, the reliable shape is one rice tray, one or two stew trays, one vegan tray, one salad tray, and bread. That gives every guest a full plate and covers vegans without cooking a separate meal for them — maharagwe ya nazi, sukuma wiki, kachumbari and vegetable sambusa are all vegan as they are.
For an office lunch, drop the salad down and add sambusa: people eat standing up and half of them are back at a desk in twenty minutes. For a family gathering, more chapati than you think.

Timing, delivery and what to do with the leftovers
Food needs a day's notice at minimum; more for a large order, because big trays take a whole morning. Cakes need three days, or a week for colour-matched or heavily piped work. The kitchen is open Sunday to Friday and closed all day Saturday for the Sabbath, so trays for a Saturday event are delivered on Friday.
That Friday handover is genuinely fine. Stews and beans deepen overnight, pilau reheats covered in a low oven so the grains steam rather than dry out, and chapati warms in a dry pan. Only kachumbari needs doing on the day — tomatoes, onions, chilli and lime from any market hall.
Delivery covers all 23 districts of Budapest, Buda and Pest. Collection is at Erzsébet krt. 19 in District VII, on the 4–6 tram line near Blaha Lujza tér, which is often quicker than a car if your flat is on the Pest side. Payment is by bank transfer in advance or cash on delivery.
