What a Budapest winter actually does to you

Nobody warns you about the light. The cold is manageable — you buy a coat, you learn which trams have the good heaters, you stop underdressing. What catches people out is the grey. There are stretches in January where the sky sits low over the Danube for days and the afternoon feels like early evening by three.

The practical effect is on eating. You skip lunch, you graze on something cold and quick, and by the time you get home you are tired and you eat badly. The fix is not complicated: eat something hot, dense and properly seasoned in the middle of the day or at the end of it, and eat it sitting down.

What to order when it is cold

Kenya is not a cold country, and yet Kenyan food is unusually good winter food. That is because the everyday cooking is slow, wet and spiced with warm spices — cumin, cardamom, cinnamon, cloves, ginger, black pepper — rather than fresh ones.

The dishes that earn their place in December:

  • Nyama na viazi — beef stew with potatoes, cooked until the meat gives way. The closest thing this kitchen has to a Hungarian pörkölt in spirit, though the spicing goes a different direction entirely. More on it in Nyama na Viazi.
  • Pilau ya nyama — rice cooked in spiced beef stock. One dish, no sides needed, smells of cinnamon and cumin when you open the box.
  • Maharagwe ya nazi — beans in coconut milk. Vegan, thick, and the most warming thing on the list for the money.
  • Chicken stew with ugali — the plainest, most comforting combination there is.

Practical winter notes for a new arrival

Get the food while it is hot and eat it while it is hot. Hot food in cold weather has a short window, especially crossing a wide city. If you live out in Zugló or over the river, ask for the stew and the starch packed separately — the rice stays better, and it reheats more evenly.

Ginger is worth keeping in your kitchen all winter. Fresh ginger is available in Budapest year-round, and a thumb of it grated into boiling milk and tea with sugar takes four minutes and does more for a cold evening than most things you can buy.

A note on greens. Sukuma wiki is made with a green that does not grow here, but kale and savoy cabbage are in every market hall through the winter and behave almost identically — thick leaf, holds up to hard frying. Winter is actually the best season in Hungary for this particular dish.
