The anchor is pilau ya nyama: long-grain rice cooked in spiced beef stock with onions browned almost to mahogany, cumin, cardamom, cinnamon, cloves and black pepper. It arrives brown, not yellow, and it smells across a room. Pilau is the dish Kenyan families cook whenever a lot of people need feeding from one pot, which is exactly what a party is.
Beside it goes sauce. Chicken stew, or nyama na viazi — beef stewed with potatoes until the potatoes have taken on the colour of the gravy. Then maharagwe ya nazi, red beans simmered in coconut milk until thick, which is the vegan dish that carnivores finish.
Then the things people pick up. Chapati, soft and layered, torn and used to mop. Sambusa, the Kenyan samosa, beef or vegetable, crisper than most people expect. And kachumbari — raw tomato, red onion, coriander and lime — the sharp, cold counterweight to everything else.

Building the order tray by tray
- Start with the rice. About 250 g of cooked rice per adult at a party, half that for a child under ten. Thirty guests is roughly two large trays.
- Add one stew per fifteen guests. One generous ladle each. Two stews across thirty people gives everyone a choice.
- Put in one full vegan tray, whatever the guest list looks like. It never comes back full.
- Count chapati at two per adult. Sixty for thirty guests. Order more if chapati is doing the work of the starch.
- Add sambusa if people will stand. Two each for the first hour, before the trays are opened.
- Order the cake three days ahead — a week if the icing has to match a colour or the piping is heavy.

What it tastes like to a guest who has never had it
Expect aromatic, not fiery. Kenyan food leans on warm spices — cumin, cardamom, cinnamon, cloves, pepper — and pirospaprika is not the spice here. A Hungarian guest who likes pörkölt will recognise nyama na viazi almost immediately, and will then notice that the seasoning goes somewhere else entirely.
The pilau tastes savoury and slightly sweet from the onions, the grains separate rather than sticky. The beans are rich and mild. Children usually eat the rice and the chapati and ignore the rest, which is normal.

Food needs a day's notice; a cake needs three days, or a week for colour-matched or heavily piped work. Party season in Budapest bunches up — late spring around ballagás, then summer, then December — so earlier is better.
