Too many dishes, not enough of each. Five half-trays look generous and run out in ten minutes, because everyone takes a spoon of everything. Three full trays feed the room.

The second mistake is forgetting that rice does the heavy lifting. If the budget is tight, cut a second meat dish before you cut rice or chapati.
