What Is Pilau? Kenya's Spiced Rice, Explained

Pilau is a Kenyan one-pot rice dish in which the rice is cooked in spiced meat stock, not served under a sauce. Onions are browned almost to mahogany, beef or chicken goes in, then cumin, cardamom, cinnamon, cloves and black pepper. What is pilau made of?

The short list is rice, meat, onions and a warm spice mix. The long answer is in the method. Onions are sliced thin and fried slowly until they go from gold to deep brown — that stage is what gives pilau its colour and its faint sweetness. Beef on the bone or chicken pieces are browned in the same pot with garlic and ginger. Then the spices go in: cumin seed, green cardamom pods, a piece of cinnamon bark, a few cloves, black pepper. Stock is added, the rice goes in, the lid goes on, and the pot is left alone until every grain has drunk the liquid.

Why Kenyan pilau is brown, not yellow

People who know biryani or a turmeric-heavy rice expect yellow. Kenyan pilau is brown, and the brown comes from the onions and the beef stock, not from a colouring spice. There is no turmeric in a standard pilau, and — a note for Hungarian cooks — pirospaprika is not the spice here either. Swapping in paprika will give you something reddish and pleasant, but it will not be pilau.

Pilau masala is the ready-ground blend many Kenyan kitchens keep in a jar. It is not a chilli blend. It is the same warm spices, ground together, so that the cook can throw in one spoon instead of five.

What pilau tastes like if you have never had it

Imagine rice that smells of cinnamon and cumin at the same time, savoury rather than sweet, with soft beef falling off the bone through it. The heat level is low. The texture matters too: the grains stay separate, slightly dry, never sticky or creamy.

How pilau is eaten in a Kenyan home

Pilau is a gathering dish. It appears at weddings, at baby showers, at Christmas, at funerals, at the end of Ramadan — anywhere a lot of people need feeding from one pot. It is served in a mound on a flat plate, eaten with a spoon or with the right hand, and it is almost never served plain.

What comes with it:
