Kenyan wedding food means pilau. Rice cooked in spiced beef stock is the dish of every Kenyan celebration, and a wedding table is built around it: a tray of pilau in the middle, a meat stew beside it, beans in coconut milk for the vegan guests, kachumbari to cut the richness, and chapati to scoop with. Why pilau is the centre of Kenyan wedding food

Pilau ya nyama is not fried rice and it is not biryani. The onions are browned slowly until dark, the spices — cumin, cardamom, cloves, cinnamon, black pepper — go in whole or freshly ground, the beef is browned in that base, and the rice is then cooked in the stock so every grain takes the colour and the smell. It comes out brown, not yellow, and the aroma reaches the corridor before the tray does.

A wedding menu that feeds both families

  • Pilau ya nyama — the centrepiece, and the dish people go back for.
  • Nyama na viazi — beef stew with potatoes, tomato-dark and slow-cooked. Hungarian guests recognise it immediately.
  • Chicken stew — for guests who do not eat beef.
  • Maharagwe ya nazi — beans in coconut milk, thick, mild and fully vegan.
  • Sukuma wiki — greens fried with onion and tomato, made here with kale or savoy cabbage.
  • Kachumbari — raw tomato, onion, chilli and lime, put out at the last minute.
  • Chapati — soft and layered, torn by hand and used to scoop.
  • Sambusa and mandazi — for the arrival and for late in the evening with chai ya tangawizi.
  • A hand-iced cake — 1 kg serves eight to ten, in vanilla, chocolate, pineapple, strawberry or marble.

Eat the way the dish expects: a plate of pilau, stew spooned over one side, greens and salad on the other, chapati in the hand. Many guests will use their right hand rather than a fork, and nobody minds either way.

Planning it around a Budapest wedding day

Weddings in Budapest are usually Saturday. The kitchen is open Sunday to Friday and closed all day Saturday for the Sabbath, so wedding food is cooked and delivered on Friday. That is less awkward than it sounds. Stews and beans are better on the second day, pilau reheats well in a low oven, and chapati warms in a dry pan in seconds. Kachumbari should be chopped fresh on the day from tomatoes and onions bought at any market hall.
