What hiring a Kenyan cook actually means here

Most people who search this are imagining a private chef arriving with knives. What usually solves the problem better is catering: the cooking happens in a kitchen that is set up for it, and the trays arrive at your address ready to serve. Your kitchen stays yours, and the food comes out the way it does when a cook has her own pots.

This matters more than it sounds for Kenyan food. Pilau wants onions browned slowly and a covered pot left alone. Chapati is rolled, rested, rolled again and cooked in layers on a dry pan — twenty minutes of hand work per batch. Neither job goes well in a borrowed kitchen during a party.

What a Kenyan cook makes for an event

The usual event spread is one starch, one or two stews, a vegetable and a fresh salad. Pilau ya nyama does most of the work: rice cooked in spiced beef stock, aromatic rather than hot, and it holds temperature well in a tray. Beside it go nyama na viazi (beef with potatoes) or chicken stew, maharagwe ya nazi for anyone vegan, sukuma wiki, and a big bowl of kachumbari.

Kenyan food suits a mixed Budapest guest list because the heat is low. Warm spices carry the flavour, and chilli sits in a separate dish for whoever wants it.

The rule behind the table: about 150 g of uncooked rice and 200 g of stew per adult, and two chapatis each, going to three if chapati is the only starch on the table. Add a third more of everything if the event runs long or if teenagers are coming. Samosas go at two to three per person as a starter. Booking, notice and the Budapest calendar

Food needs a day's notice; a cake needs three, or a week if it is colour-matched or heavily piped. For an event, tell us as early as you can, because ballagás season in late spring and the run-up to Christmas fill quickly. The same is true of dates that matter to the Kenyan community in Hungary — Madaraka Day on 1 June, Mashujaa Day on 20 October, Jamhuri Day on 12 December.

One fixed point: the kitchen is open Sunday to Friday and closed all day Saturday for the Sabbath. Food for a Saturday event is cooked and delivered on Friday, and it reheats well. Messages sent on Saturday are answered on Sunday.
