What is in a Kenyan samosa?

The beef version is the standard: minced beef browned with finely chopped onion, garlic, ginger, cumin, ground coriander and black pepper, finished with fresh coriander leaf and sometimes a little green chilli. The mixture is cooked dry, so it does not make the pastry soggy.

The vegetable version swaps in potato, peas, carrot and onion with the same spicing, and it is the one to ask for if you want something meat-free at a party.

The pastry is the giveaway. Kenyan sambusa uses a very thin sheet, wrapped into a tight triangle and sealed with a flour paste. Fried, it shatters rather than crunches.

Neither is a copy of the other. The sambusa arrived on the Swahili coast along the Indian Ocean trade routes and settled into East African cooking on its own terms, which is why the spicing leans towards cumin and black pepper rather than a hot masala.
