  3. Something fresh. Kachumbari: raw tomato, onion, chilli and lime. It cuts through everything else on the plate, and the chilli is mild enough that the heat stays gentle.
  4. Something sweet with tea. Mandazi, the East African doughnut, lightly sweet and cardamom-scented, served with chai ya tangawizi — Kenyan ginger tea boiled with milk rather than brewed.

Feeding guests who have never eaten Kenyan food

Half the room at a Budapest baby shower will be Hungarian colleagues and neighbours. The thing to reassure them about is heat: Kenyan food is aromatic, not fiery. The spices are cumin, cardamom, cloves and cinnamon, warm rather than sharp, and pirospaprika is not the spice here. Chilli appears only in the kachumbari on the side, where each person takes as much or as little as they want.

Chapati helps too. It is soft, layered and torn by hand, and it gives anyone unsure of the rice something familiar to scoop with.

Nothing on the menu is raw fish or soft cheese, and everything is served cooked through. Vegan guests are covered by the beans, the greens, the salad and the vegetable sambusa.

The cake, and the timing that goes with it

The cake is the photograph everyone takes. The house size is 1 kg and serves eight to ten, in vanilla, chocolate, pineapple, strawberry or marble. Pineapple suits a spring shower — light, a little tropical, and it does not sit heavily after pilau.

Colour is usually the theme decision: soft pink, pale blue, a shade matched to the invitation.
