A baptism celebration in Budapest usually means one long table, three generations at it, and food that has to stay good for two or three hours while people talk. What to put on the table after the service

The meal after a baptism is not a dinner party. People arrive in waves, hold a baby, put a plate down, pick it up again twenty minutes later. That shape of eating rewards food that does not collapse while it waits.

A table that works has four things on it. One substantial starch — pilau ya nyama, Kenyan rice cooked in spiced beef stock with deeply browned onions, cumin, cardamom and cinnamon. Samosas — sambusa, beef or vegetable — save the first half hour, because early guests want something in the hand and nothing on a fork.

That is roughly 250 grams of cooked rice per adult, two chapatis each, and half of everything for a child under ten. If half your guest list is Hungarian and new to the food, order more pilau and less stew — the rice is what people go back for. The cake, and when to order it

A baptism cake does not need to be loud. A 1 kg cake serves eight to ten people, which covers a small family gathering on its own; larger parties usually take two. Flavours are vanilla, chocolate, pineapple, strawberry and marble, and the icing is done by hand — a piped name, a date, a soft colour.

Notice matters more than design. Three days for a cake, and a full week if the icing has to match a colour you have already chosen or the piping is heavy. In late spring, when baptisms, ballagás and Anyák napja land on the same few weekends, order early rather than hopefully.

Working around a Sunday, and around Saturday
