Why a custom cake colour needs a week

A standard hand-iced cake takes three days. A colour-matched one takes a week, and the extra days are not padding.

Butter is yellow. Buttercream is therefore ivory before a single drop of colour goes in, and that warm base pulls everything slightly. A grey goes faintly green, a cool lilac goes warm, a pure white is genuinely difficult. The way round it is to mix a test batch, leave it to sit, look at it again in daylight, and adjust. Gel colour darkens as it rests — a shade that looks correct at the moment of mixing can be a full step deeper an hour later. You cannot find that out under time pressure.

How to send a colour so it can be matched

• Photograph in daylight, near a window, with the flash off. A Budapest flat lit by one warm bulb in February will make a pale pink look peach.
• Send the object, not a mood board. The dress, the invitation, the balloon, the nursery wall. One honest photo of the real thing beats five stylish ones from the internet.
• Bring a physical sample if you can. A ribbon, an offcut of fabric, a printed invitation. If you are collecting at Erzsébet krt. 19 in District VII anyway, drop it in when you place the order — it removes all the guesswork at once.
• Say which colour matters most. If the balloons and the dress are two different pinks, name the one the cake has to follow.

Colours that behave, and colours that fight

Pastels are the friendly end. Soft pink, powder blue, mint, butter yellow, lilac — these take a small amount of colour, sit well on an ivory base and photograph kindly. The difficult end is deep red, true black and pure white. Red and black need a lot of colour to get there, which can affect how the icing tastes and leaves the mouth. White has to fight the butter. None of these is impossible, but all three need the full week and an honest conversation first about how close is realistic.

An ombre — one colour graded from pale at the top to deep at the bottom — is a good compromise. It reads as bold while most of the cake stays in the easy pastel range.

Light, screens and what the photos will look like
