How far ahead to order a cake: why three days, not one

A cake is not assembled, it is built in stages, and each stage has to wait for the one before it.

1. Day one — shopping and baking. Butter, eggs, flour, the fruit if it is a pineapple or strawberry cake. The sponge is baked and then left to cool completely. A warm sponge tears when it is filled, so this is not a step that can be hurried.
2. Day two — filling, crumb coat, colour. The layers are filled and the cake gets its first thin coat of icing to seal the crumbs. Colour is mixed and tested now, because icing colour deepens as it sits.
3. Day three — icing and piping. The final coat goes on, the sides are smoothed, the borders and writing are piped by hand. Then it is chilled so it travels well.

Compressing that into a single day is how you get a lopsided cake with a smudged name on it. Three days is the minimum that produces something you would be glad to put candles on.

When a week is the honest answer

Ask for a week whenever the cake has to match something. Count backwards from the party, not forwards from today. If the party is Saturday and the cake is a colour-matched one, the order wants to be in by the previous weekend, not on Wednesday.

Budapest has a few weeks where everyone needs a cake at once — graduation season in the spring, the run of birthdays around the holidays, and the end of the university term when students in District VII and District VIII start booking. Those weeks fill up. If your date sits in one of them, order early even for a simple cake.

If your date is already close

Message anyway. Send the date, the flavour and the size, and you will get a straight answer about whether it can be done rather than a hopeful one. Sometimes a simple vanilla cake with a name piped on it fits into a week that a colour-matched ombre would not.
