What is sukuma wiki, and why that name?

"Kusukuma" is to push, "wiki" is week. The phrase is a joke with something honest under it: greens are cheap, they cook fast, and a pan of them turns a small amount of meat into a meal that feeds everybody. That is the real role of this dish on a Kenyan table — not a side salad but the thing that makes the plate work.

The greens are usually collards. Kale is close enough that nobody argues. Neither is boiled and drained; the leaves go into a hot pan after the onions, with the tomato, and they cook down in their own moisture until they are tender but still green.

How it is cooked

The method is short and the order matters. The leaves are sliced into thin ribbons first, and thin genuinely matters — it changes the texture of the finished dish completely. Chopped onion goes into hot oil and softens until it just starts to colour. Chopped tomato follows and collapses into a rough sauce. Then the greens go in with salt and a splash of water, the lid goes on, and the pan is left until the leaves are tender. The lid comes off at the end so the liquid cooks away and what is left is greens, not soup.

  • Savoy cabbage (kelkáposzta) — milder and sweeter, cooks faster, a good winter stand-in.
  • Spring greens or chard — usable, but they collapse quickly, so cut the cooking time.
