Budapest is full of people who arrived for a semester or a contract and have not got as far as Hungarian yet. A birthday comes round, and the cake turns into a small logistical problem: how do you explain a design, a flavour and a date when you are not sure of the words? Plenty of people give up and buy whatever is in a display case.

What to send in your first message

1. The date the cake is needed, and the time it has to be ready. Write the month as a word — 20 June, not 20.06 — because Hungarian and English date order differ.
2. How many people it has to feed. The house size is a one-kilo cake, which serves eight to ten.
3. The flavour: vanilla, chocolate, pineapple, strawberry or marble.
4. Any wording for the top, typed exactly as it should appear, accents included.

Hungarian addresses have a shape worth copying. Give the district in Roman numerals, or the four-digit postcode that encodes it: the middle two digits are the district number, which is why the kitchen's own address is 1073 Budapest, District VII. Then the street name and house number, then the floor and door, which are written as something like 3/12. Add the door code if the building has an entry keypad, and a phone number that will be answered while the delivery is on its way.

This matters more for cakes than for anything else, because a cake in a box should not be carried up and down a stairwell twice while someone works out which bell to press.

Colours, designs and what is realistic

Colour matching is the part that most often needs the extra time. Buttercream takes colour well, but a deep shade, an ombre fade or a specific brand colour needs mixing, testing and drying time, which is why a colour-matched cake asks for a week rather than three days. The kitchen is open Sunday to Friday and closed all day Saturday for the Sabbath. If your celebration is on a Saturday, the cake is finished and handed over on Friday. Messages sent on Saturday are answered on Sunday, so plan a weekend cake by Thursday.
