What an Easter lunch looks like on a Kenyan table

Two notes. If a Hungarian Easter ham and boiled eggs are also on the table, cut the numbers above by about a fifth — people eat across both, not twice over. The Saturday rule, and what it means for Easter weekend

Nyumbani Vibes Foods is open Sunday to Friday and closed all day Saturday for the Sabbath. Easter Sunday and Easter Monday are both delivery days, which covers most Easter lunches. If your gathering falls on Holy Saturday, the food is delivered on the Friday, and for this menu that is genuinely fine: a beef stew that has sat overnight is better than one made an hour before, and pilau reheats covered without drying out.

Keep trays warm at 100°C, covered, for up to two hours, and chapati under a tea towel. Reheat stews on the hob with a splash of water.

Ordering, collection and delivery

Give four to five days for Easter weekend rather than the usual one day. A cake needs three days, or a week if the icing has to match a colour or carry heavy piping — a 1 kg cake serves 8–10 people.
