What makes a cake African-themed?

There is no single African look, and any baker who tells you otherwise is selling you a cliché. The continent is fifty-odd countries and thousands of design traditions. What people usually mean when they ask for an African-themed cake in Budapest is one of three things.

The first is pattern. Kanga and kitenge cloth — the printed fabrics worn across East Africa — carry strong repeating borders, and those translate well into piped icing. A band around the base, a band around the top edge, and the sides left clean gives you something recognisable without turning the cake into a costume.

The second is colour. Warm reds, ochres, deep greens, black and gold read as African to most eyes. Sometimes a family wants their national flag colours instead, which is a straightforward request as long as you tell us early.

The third is language. A Swahili line piped on top does a lot of work with very little icing. Karibu means welcome. Hongera means congratulations. Nyumbani means at home, which is where our own name comes from.

Colours, patterns and what hand-icing can actually do

Every cake here is iced by hand, not printed. That is the honest limit and also the point. Hand-piping gives you clean geometric bands, dots, scallops, rosettes, ombre fades and lettering. It does not give you a photographic reproduction of a wax print, and a design with dozens of tiny elements will take a week rather than three days.

Flavours that suit an African-themed table

The design is the outside. The inside is a separate decision, and it matters more to the people eating it. We bake five: vanilla, chocolate, pineapple, strawberry and marble.
